As part of the Symposium of Honey and Human Health, pharmacist Mike McInnes of Edinburgh, Scotland discussed it in his presentation, “The Role of Honey in Restorative Sleep”. He discussed raw honey health benefits in the proper fueling of the liver to optimal glucose metabolism during sleep.
Better Sleep with Honey
McInnes states that honey is the best natural food to accomplish this liver fueling due to the 1:1 ratio of fructose to glucose found in honey as the fructose unlocks an enzyme that is necessary for the incorporation of glucose into glycogen in the liver.
McInnes explained that an adequate amount of glycogen in the liver is essential for the brain during the night’s fasting. He further explained that without sufficient glycogen, the brain triggers the release of the stress hormones adrenalin and cortisol, in order to convert muscle protein into glucose.
A note on night time fasting. Typically you want to stop eating twelve hours before you start eating in the morning. An obvious exception to this rule is drink plenty of water throughout the day and into the evening.

This stress may lead to impaired glucose metabolism, insulin resistance, diabetes and increased risk for cardiovascular disease, hypertension, obesity, osteoporosis, some forms of cancer and several neuro degenerative conditions.
